Happy Earth Day
Yeh, I got nothing. It’s not like we have an Earth Day party at the house.
Er, to celebrate I tried a new recipe again? Truthfully I was worried I might be pushing my luck introducing two new recipes back to back with the kids. Oh well. I’ve been in a new recipe mood for a while.
Anyway…years ago I had a Chicken Scallopini recipe I loved. Well, I’m 4 pounds away from my WW lifetime goal… so I went with the lighter version: Chicken Scallopini from Cooking Light. Kids had it over angel hair pasta tossed with the sauce and chopped tomatoes, while I had mine with tomatoes and side salad. (Still avoiding carbs a semi-fair amount… shhhh, we are NOT counting last weekend’s sushi… thankfully I gained nary a pound on that little cheat of mine. YAY!) I digressed… sorry. Recipe is a keeper. Thumbs up from TJ. Thumbs down from Tommy. Very tasty thumbs up from me. (Tori was not here to rate… we’ll get her vote next time.)
The boys were thrilled I made a special treat today. Banana Bread. Mmmmmm. Our tried and true recipe from Martha follows:
1/4 Pound (1 stick butter), room temp
1 c sugar
2 eggs
1 1/2 c flour
1 t baking soda
1 t salt
1 c mashed very ripe bananas
1/2 c sour cream
1 t vanilla extract
1/2 c chopped walnuts or pecans
Preheat oven to 350°F, butter 9X5X3″ loaf pan. With an electric mixer, cream the butter and sugar until light and fluffy. Add the eggs beating well. Sift (yeah right) the dry ingredients together and combine with the butter mixture. Blend well. Add the bananas, sour cream, and vanilla. Stir well. Stir in the nuts and pour into the pan. Bake 1 hour until a cake tester comes out clean. Turn out onto a rack to cool.
*obviously, I leave out the nuts. I increase the sour cream to 3/4 cup and add vanilla until is smells right.
If you don’t have sour cream on hand vanilla yogurt works pretty well.
And finally: Tim’s house update:
We had minimal activity at the house today. They are ready to do the fireplace and they installed the bathroom fans and poured the rest of the driveway and sidewalk.
